What in the world is Chicken Adobo? I’m glad you asked. It’s this really kick ass dish that I got from the Philippines. I’ve altered it somewhat from what one of my filipino friends showed me, but it’s still the essence of adobo.
Chicken Adobo (or “Chicken A-Go-Go” as cybrpunk calls it.:)
Ingredients
4 Potatoes, large peeled (or not peeled)
3 or 4 chicken thighs
3 or 4 chicken drumsticks
1 onion (or 2 suit to taste)
5 cloves of garlic (or more or less
~1/4 cup soy sauce
~1/3 cup vinegar
3 tbsp peppercorns
5 cups water (or just enough to fill the pot until the ingredients are immersed)
Put all the ingredients into a large pot. Heat to boiling, let simmer for approximately 3 hours, or until the chicken is very tender. Add more or less vinegar and soy sauce to taste. That’s pretty much it.
Serve on top of rice or in a bowl.
This can also be adapted as a crock pot recipe as well. I have yet to use my crock pot, so I couldn’t tell you how it turns out. But it cannot be much different, and might taste better since it’ll give the chicken and potatoes enough time to soak in all the flavours.
You can optionally add other vegetables as well. Chicken Adobo is a very flexible meal. It’s very simple and easy to make.
By the way, I never really measure anything, so if you want to add more chicken, more potatoes, etc, you should be fine. Just make sure you add/remove according to taste. Especially the vinegar and soy sauce. That much can make or break the dish.
And beware, if you have any friends that do not like the smell of vinegar, this will kill them.
Don’t invite them over for this meal.
